Too much color can make the onlooker lose focus. I've seen some model portfolios shot entirely with all types of busy and interesting backgrounds with too much color can lead the eye to the background instead of the model, where it should be.

Models want their faces and bodies to be seen and could care less what an agent thinks about the background used.

Sharp black and white photos provide focus and clarity for models that is often lost when there is a lot of color in the portrait. You may think that you want a color photograph to set off your ice-blue eyes but a black and white photo will work even better because of the sleek contrast.

For figure models who pose for "artistic" images, black and white makes the shadows darker and a more mysterious theme is created. These are the type photos you'll see hanging on the walls of art galleries. I love the simple beauty of the model that black and white images produce so b&w is almost imperative for art photos.
